3 cups vegetable oil

3/4 cup (5 ml) sugar

5 – 7 tablespoons apple cider vinegar (flax)

Method

Wash, strain and grate the stems, leaves and leaves of both.

Mix all ingredients to form a solid, smooth base. Set aside.

In a medium bowl, combine olive oil, vinegar, water, ginger and sugar. Stir into the lemon juice till thickened to a thick batter.

Add in dry ingredients. Add in mixture to wet. Cook slowly, using a strainer, stirring occasionally.

In a large saucepan, whisk in ground mint, ginger and spices. Add in the vinegar and sugar and let simmer and boil slowly until the mixture has doubled in size, about 10 – 15 minutes. Remove from pan and set aside to cool.

To make lemon zest, add lime peel. If doing so, add in water.

When finished, add in the lemon juice, and stir lightly to combine.

In the middle of the lemon juice, add in the ginger and garlic. Cook until sweetened enough to combine and lightly brown in place.

Top with cinnamon, vanilla, ginger, sugar, cinnamon.
