1/2 cup (150 ml) fresh fruit juice (grapefruit and white wine grapes)

1/2 tsp vanilla extract

1/2 tsp dried oregano extract (if using frozen)

1/2 tsp baking soda

1/2 tsp finely ground oregano

1/2 tsp fine sea salt

Heat the butter, olive oil, and water in a large pot over medium heat. While the sauce is hot, add the fruit juice and the vanilla extract. Once the mixture is heated, add the ground nuts, the salt, and salt to the pot and cook 2-3 minutes on each side, or until they're slightly softened and slightly golden brown. Allow the mixture to thicken slightly.

Add the crushed almonds, and the sugar. Blend to combine. Add the chopped nuts, and continue to top with the other chopped nuts, until they begin to soften.

Stir the remaining nuts into the mix. Taste for salt, and keep blending until the mixture is thickened. Be careful not to brown the top as they won't stay covered in the sauce.

This is a great, delicious, summer recipe for the Vegan Granola.
